8 eggs: yolks and whites separated
250 mL (1 cup) cheese
250 mL (1 cup) milk
60 mL (1/4 cup) chopped fresh parsley
1 mL (1/4 tsp.) salt
45 mL (3 tbsp) flour
1 mL (1/4 tsp.) ground pepper
1 pinch of nutmeg
1 In a large bowl, whisk together egg yolks, milk, parsley, flour, salt, pepper and nutmeg.
2 Stir in the cheese. Set aside.
3 In another bowl, using an electric mixer, beat the egg whites until they form stiff peaks.
4 Using the whisk, fold one third of the beaten egg whites into the reserved egg yolk mixture.
5 Fold in the remaining egg whites in the same manner.
6 Pour the mixture into an 8-inch (20 cm) round glass dish.
7 Bake in a preheated 400°F (200°C) oven for about 30 minutes or until puffed, golden and firm when lightly pressed with a finger.
8 Serve immediately.
